Meal Planning Monday

This is a busy week as we will be getting the house ready for the onslaught of company this weekend. Saturday, Lucas is getting baptized and the "after party" will be at our house. In light of this exciting event, I am planning easy meals for the week so I can spend more time prepping the house than in the kitchen. And to top it off, Doug is using the second 1/2 of his paternity leave this week so he will be home with us. (Now I can be happy he only used 1 week of his leave when Lucas was born)

Sunday - Sloppy Joes, Ranch style beans
Monday - Root Beer Pulled Pork (Crock Pot)
Tuesday - Pulled pork sandwiches, potato salad, fruit salad
Wednesday - Fish Tacos
Thursday - Sandwiches, chips
Friday - TBD
Saturday - Lucas' Christening

Seeking Your Suggestions - Meals to Freeze

As time is drawing closer to Lucas' arrival, I would like to make several meals to freeze for a later date. I would love to hear your thoughts on meals that you like to make/freeze for later.

Meal Planning Monday

In my quest to become more organized and make Meal Planning slightly less painful, I am stealing an idea off of another friends' blog called Meal Planning Monday.  I scan through this list to find 1 or two things that jump out at me for the week and then go from there. I have learned a few great recipes doing this. I figure this will also be a great way to track my planned meals each week. Not to mention that when it comes time to actually make the meal, I know I can find the recipe...Yes, I have had a couple of mishaps recently where it came time to make the meal I planned, but I had neglected to save the link to the recipe...OH What fun that is to go searching for during a weekday evening :)

On a side note, I want to warn you that I will be bombarding you with posts about food for a bit. Not only are there some food related topics on my mind, but with all the nesting going on over here, I'm trying to make sure Doug and I don't starve over the next couple of months after the arrival of sweet Lucas.

Tuesday: Culpeppers
Wednesday: Dinner at RCYC

Thursday: Ham Steaks with Pineapple, Rice, and Green Beans

Friday: Tilapia by Doug (I'll let him know)

Saturday: Crock Pot Roast with potatoes, carrots, and salad

Sunday: Bacon Wrapped Teriyaki Chicken Skewers w/ pineapple cilantro rice
