As time is drawing closer to Lucas' arrival, I would like to make several meals to freeze for a later date. I would love to hear your thoughts on meals that you like to make/freeze for later.
I bet you never in your wildest dreams would have thought it would be me to post her about this, but being a bachelor, I have some tricks for freezing...I usually have frozen homemade Lasagna in the freezer...meatloaf works pretty good too. Stews and Soups freeze well and all they need is some time in the Microwave..
I have a great tortilla casserole recipe that can be frozen:
http://www.food.com/recipe/tortilla-casserole-oamc-109503 I make a few changes- I use a taco sauce like Ortega to coat the tortillas when layered so they don't get too hard. Plus I mix all the meat (I usually sub turkey for the beef), beans and a can of green chiles or tomatoes with green chiles (rotel) for one of the layers. Easier to spread. Like a mexican lasagna! I've made it for some new moms and they love it! Easy, a little spicy and delicious :) I have never frozen it but of course it has directions to freeze it.
Plus, when I went to food.com & typed in OAMC, I got lots of recipes to freeze and serve- must be initials for something to make-ahead, but I am not sure. Good luck! I can't wait to be there and meet baby Lucas!
